Honey Mustard Pretzel Chicken
Yield:
Ingredients:
1 1/2 pounds boneless chicken breasts
4 cups hard pretzels (like sourdough), coarsely crushed
1/2 cup olive oil
1/2 cup Dijon mustard
1/3 cup honey
1/4 cup water
3 tablespoons red wine vinegar
coarse salt
pepper
Directions:
Preheat the oven to 400° F.
Coarsely chop pretzels in food processor.
Combine oil, mustard, honey, water and vinegar in a separate bowl.
Season chicken with salt and pepper.
Pour half of the dressing into a large shallow dish and coat the chicken breasts with the dressing.
Dredge the dressing coated chicken in the pretzel crumbs and place on a broiler pan.
Bake 20 – 25 minutes.
Serving with the remaining honey mustard dressing.
