Honey Mustard Pretzel Chicken

Ingredients:
- 1 1/2 pounds boneless chicken breasts
- 4 cups hard pretzels (like sourdough), coarsely crushed
- 1/2 cup olive oil
- 1/2 cup Dijon mustard
- 1/3 cup honey
- 1/4 cup water
- 3 tablespoons red wine vinegar
- coarse salt
- pepper
Directions:
- Preheat the oven to 400° F.
- Coarsely chop pretzels in food processor.
- Combine oil, mustard, honey, water and vinegar in a separate bowl.
- Season chicken with salt and pepper.
- Pour half of the dressing into a large shallow dish and coat the chicken breasts with the dressing.
- Dredge the dressing coated chicken in the pretzel crumbs and place on a broiler pan.
- Bake 20 – 25 minutes.
- Serving with the remaining honey mustard dressing.
